Here are Pars Saffron's Quality Classes for Saffron
The Iranian saffron of the highest quality is known as "Sargol". In Spain, the term "Coupé" is used. It contains only the red label flaps from the saffron crocus pistils and therefore has an exclusive aroma, taste and color. In the Sargol quality, the red marking flaps are separated from the pin before the drying process. This means that the saffron retains its clear, red color and results in a color strength between 220 and 260.
Sargol is available in three different qualities: Sargol (Negin), Sargol (S1) och Sargol (S2).
In this quality class, the brand tabs are strong and completely free of pins. The rating tabs are therefore short with a color intensity of 260 USP or higher. This is the best saffron available.
In this quality class, the brand tabs are not as strong as in the saffron of quality Negin. The marking tabs are also cut short here with very little or none of the pins left. The average color strength is higher than 240 USP.
In this quality class, the quality is lower than Sargol S1 and the pistils can be broken. The marking tabs are also cut short here with very little or none of the pins left. The average color strength is higher than 220 USP. This quality is suitable for cooking saffron extracts.
Dasteh is the original quality in Iran. Most growers are accustomed to harvesting saffron in this form where the entire stamens are retained. Different quality categories I-IV are produced by dasteh depending on how much of the yellow pin is left.
Our Dasteh is of the highest quality (C1) contains the entire stamens, with less yellow and more red.
Saffron of all Qualities is Available as Whole, Coarsely Ground or Powder.
